Define the serving style
Small event portions and generous dessert portions produce different counts from the same cake. Choose the cutting style before selecting dimensions.
Area is the comparison base
For cakes of similar depth, top area is a useful basis for comparing round and rectangular pans. Tiered cakes and unusual shapes need a separate plan for each level.
Check oven and equipment capacity
A larger pan must fit the oven with room for air circulation. Very large batches may bake more predictably as several normal-sized layers.
